Ingredients

  • 100 grams green beans blanched
  • 50 grams of broccoli florets blanched
  • ½ a lemon
  • ½ tbsp olive oil
  • 50 grams cherry tomatoes
  • Salt and pepper to taste
  • 100 grams Salmon Fillet

Instructions

  1. Preheat oven to 400 degrees F, scattering your green beans, broccoli, and tomatoes in a small roasting pan. Drizzle with olive oil.
  2. Lay the salmon on top of the layer of vegetables. Squeeze lemon juice over the ingredients, then season with salt and pepper.
  3. Roast for 20 minutes, then spoon the pan juices over fish and serve.
