Greek Salad with Minty Dressing

Ingredients

  • 1 small cucumber chopped
  • 1 red pepper chopped
  • 1 green pepper chopped
  • 3 plum tomatoes chopped
  • 3 green onions sliced
  • 100 grams crumbled feta
  • 2 cloves of garlic
  • 3 tbsp olive oil
  • ½ lemon juiced
  • 3 tbsp chopped mint
  • Salt and pepper to taste

Instructions

  1. To make the dressing, combine olive oil, lemon juice, mint, salt and pepper. Set aside.
  2. Combine remaining ingredients in a bowl, toss in mint dressing and enjoy.
