Spicy Tomato and Red Lentil Soup

Ingredients

  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 tbsp red lentils
  • 400 grams chopped tomatoes
  • 450 ml vegetable stock
  • Coriander or parsley to garnish

Instructions

  1. Combine all ingredients into a pan (excluding coriander), heat until the soup begins to simmer.
  2. Cover and cook for twenty minutes, or until lentils are soft.
  3. Combine using an immersion blender, garnish and enjoy.
