Pork-stuffed Acorn Squash

Ingredients

  • 1 acorn squash halved and seeded
  • 2 apples cubed
  • 1 cup lean ground pork
  • 1 onion diced
  • ½ tsp of clove
  • ½ tsp cumin
  • ½ tsp ground coriander
  • Salt and pepper to taste.

Instructions

  1. Preheat over to 350 degrees F.
  2. Place squash cut-side down on a baking sheet, cooking for about 30 minutes.
  3. Combine apples, pork, spices, salt and pepper. Spoon into the squash and bake for an additional 30 minutes. Serve.
