Low Carb Pork Lettuce Wraps

Ingredients

  • 1 pound pork tenderloin
  • 1 tbsp barbecue sauce
  • 2 tsp olive oil
  • 3 green onion sliced thin
  • ½ cup shredded carrot
  • 1 garlic clove minced
  • 1 red pepper chopped
  • 8 large lettuce leaves
  • Handful cilantro
  • Chopped peanuts optional

Instructions

  1. Slice pork and brush with barbecue sauce.
  2. Heat ½ of the olive oil in a pan, cooking pork until browned (set aside).
  3. Add the remaining oil and cook garlic, red pepper, carrot, and green onions for 3 minutes. Re-add pork, stir well, then pack into lettuce leaves. Garnish with cilantro and peanuts.
