Ingredients

  • 8 ounces pork tenderloin cubed
  • 1 red pepper chopped in chunks
  • 1 red onion chopped into chunks
  • 1 sweet potato peeled and cubed
  • 2 tsp olive oil
  • 1 tsp red pepper seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees F.
  2. Place all ingredients in a bowl, toss with olive oil. Spread onto a baking sheet and cook for 25 minutes. Serve hot.
