Herb Crusted Loin with Parsley Sauce

Ingredients

  • 2 pounds boneless pork loin trim the fat
  • 2 cloves garlic minced
  • 2 tsp olive oil
  • 1 tbsp dried sage
  • 1 tbsp dried thyme
  • Salt and pepper

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a small bowl, combine garlic, oil, sage, thyme, salt and pepper. Rub pork and then cook for 1 hour and 15 minutes (reaching an internal temperature of 155 degrees F). Allow to rest for 15 minutes before slicing (one serving is 4-ounces of pork).
  3. In the meantime, combine all sauce ingredients in a blender and serve.
